Gluten-Free Cheesecake Recipe
Here is a delicious cheesecake recipe I made the other day, for my sister's birthday. It was originally "glutenous" (made with graham cracker crumbs). However, I changed the crust and we all liked it better than the original!
Gluten-Free Cheesecake With Cherries |
Crust:
3/4 C. Ground Pecans
1/2 C. Ground Almond Flour
1/4 C. White Rice Flour
Filling:
4 (8 oz packages) Softened Cream Cheese
1 1/4 C. Sugar
1 Tbs. Lemon Juice
2 Tsp. Vanilla
4 Eggs, Lightly Beaten
In a bowl combine the pecans, almond flour and white rice flour. Stir in butter. Press into the bottom of a greased 10-inch stringform pan.
Then, beat cream cheese until smooth. Add sugar, lemon juice
and vanilla. Beat well. Add eggs; beat on low speed, just until combined. Spoon over crust.
Bake @ 350 for 45-50 minutes or until the center is set. Cool for 10 minutes. Run a knife around the edge of the pan. Cool in the refrigerator for at least 1 hour.
