Here is a yummy shoestring Gluten-free coffee cake recipe that I (Toni) came up with. Really moist and delightful in the morning!
Sift
together
1
1/2 cups brown rice flour
2
tsp. baking powder
1
tsp. xanthum gum
(organic)
Cut
in
1/4
cup butter
Add
3/4
cup sugar
2
eggs beaten, with a dash of olive oil
3/4
cup fresh raw milk
1
tsp. vanilla extract
Beat
until smooth. Pour into greased 8 inch round cake pan.
Sprinkle generously with brown sugar, cinnamon and nutmeg.
Bake at 350 for 30-40 minutes.
Makes
8 small moist slices.
Yum, this looks good, and maybe not too difficult for me! i just have to find xanthan gum somewhere!
